Sweet and Sour Beets

2 cups cooked or canned beets, drained
2 tablespoon butter
2 tablespoon flour
1/2 cup reserved water (in which beets were cooked in or liquid)
1/2 c. vinegar
1/2 c. cream
1 tsp. sugar
1/2 tsp. salt
pinch of pepper

Melt in a saucepan butter. Blend in flour. Stir in water in which the beets were cooked in or liquid from can. Cook until smooth, stirring constantly. Add 2 cups cooked or canned beets, drained or cubed. Heat thoroughly.
Serves 4.
