Beets with Pineapple Glaze
2 (1 pound) cans sliced beets
1 (13 1/2 ounce) can pineapple chunks
1 cup water
1/3 cup cider vinegar
4 tablespoons brown sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1/8 teaspoon ground ginger
Drain beets (from No. 1 can, about 4 cups). Drain syrup from
pineapple and mix syrup with water and vinegar. Mix brown sugar,
cornstarch, salt and ginger. Add to vinegar;
mix. Cook until thickened. Stir constantly. Add beets. Heat to
boiling (only). Just before serving, heat slightly. Mix
pineapple chunks into mixture.
Serves 6 to 8
