Jello Beet Salad
1 (1 pound) can or jar beets, sliced
1/2 cup vinegar
1/2 cup sugar
salt and pepper
2 hard boiled eggs
1/2 cup chopped celery
1 onion, diced
1 small package lemon jello
Put beets into saucepan, add vinegar, sugar, salt, pepper and
water to cover beets.
Boil 5 minutes. Drain beets, saving pickled beet juice. Slice
eggs into mold, add drained
beets, celery and onion. Dissolve lemon jello into 2 cups of
pickled beet juice. Gently
pour around and over vegetables in mold. Let set.
