I grew up with mixed feelings about beets and beet recipes.
When I was very young my mother died. Being the youngest of 5
children (all my brothers were much older,) my Grandmother R
came to stay with me and my mother's mother (Grandma W.)
Grandmother R would let me stand on a chair to teach me how to
cook. Grandmother R loved beets and served them often in
many different ways. The recipes posted in this section
are ones she used in the early 1950s.
On the other hand, Grandma W thought all beets should remain in
the garden and eaten by others. She was not fond of them
at all. When Grandmother R would fix them she would act if
they were so good and feed them to the dog under the table.
Being a young child I had mixed feelings but did know that our
dog must like them. Now that I am over 65, Harvard beets
and pickled beets are good.
