Beets in Sour Cream
1 (1 pound) can shoestring beets
2 tablespoons butter
2 teaspoons vinegar
1 tablespoon sugar
1/4 teaspoon salt
1/2 teaspoon dill weed
1/8 teaspoon pepper
1/2 cup sour cream
3 tablespoons milk
Melt butter in medium saucepan over low heat. Blend in flour.
Cook over low heat, stirring until smooth and bubbly. Remove
from heat; stir in vinegar, sugar, salt, dill
weed and pepper. Heat to boiling, stirring constantly. Boil and
stir 1 minute. Stir in beets; heat through. Stir together sour
cream and milk. Pour over beets; stir and serve.
