Beets in Raisin Sauce
1 (1 pound) can diced beets
1 (8 1/4 ounce) can crushed pineapple
2 tablespoon butter
1/2 cup firmly packed brown sugar
2 tablespoon flour
1/4 teaspoon salt
1/3 cup vinegar
1/2 cup seedless raisins
Drain beets and pineapple, saving juice. Put beets and pineapple
in separate dishes. Set aside. Combine butter, sugar, flour and
salt in saucepan. Gradually stir in vinegar
and reserved juice. Cook, stirring constantly until mixture
thickens. Add raisins and pineapple. Pour over beets. Let stand
several hours. Heat before serving.
