Veal with Green Beans and Tomatoes
1 pkg. (10 oz.) frozen cut green beans
1 1/2 lb. veal boneless shoulder, cut into 3/4 inch cubes
3 Tbsp. oil
1 can (16 oz.) tomatoes
1 Tbsp. onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 bay leaf
1 clove garlic, cut
1/2 c. water
2 Tbsp. flour
Cook beans as directed on package; drain. Cook veal in oil until
brown. Stir in tomatoes, onion, salt, pepper, bay leaf and
garlic. Heat to boiling and reduce heat. Cover and
simmer until veal is tender, about 1 1/2 hours. Remove garlic
from veal mixture. Shake cold water and flour in tightly covered
container. Stir gradually into veal mixture. Stir in
beans, heat through. Serve over hot cooked rice.
Makes 4-6 servings
