Veal Chops

1/4 c. butter
1/3 c. minced onion
1/2 tsp. minced garlic
1/2 c. chopped celery
1/4 tsp. salt
1/4 tsp. black pepper
1/3 c. flour
10 veal chops 2-inches thick
2 Tbsp. water
1/2 c. Crisco oil
1 tsp. beef flavor base
3/4 c. hot water
1/2 tsp. basil leaves
2 tsp. parsley flakes
2 bay leaves
2 (12 oz.) cans tomatoes, drained and cut in half
1 c. tomato juice
1 1/2 tsp. cornstarch

In oven melt butter over medium heat. Add onion, garlic, celery and salt. Cook 10 minutes, stirring occasionally. Remove from heat, combine salt, pepper and flour. Roll veal in flour mixture, heat oil in large skillet over medium heat. Brown veal in hot oil. Place veal over vegetables in oven. Preheat oven to 350 degrees. Drain oil from skillet, combine beef flavor base with hot water, stir well; add mixture to skillet. Stir in basil leaves, parsley flakes, bay leaves, tomatoes and tomato juice. Dissolve cornstarch in water, add
to skillet while stirring. Bring mixture to boil, pour over veal in oven, cover and bake 1 hour and 15 minutes, basting occasionally.
Serves 10.
