GERMAN POTATO
SALAD
4 c. potatoes, diced
1/2 c. celery, diced
1 med. onion, diced
1/4 tsp. pepper
2/3 c. water
1/2 lb. ham, diced & cooked
1 tbsp. parsley, chopped
1 1/2 tsp. salt
1 tbsp. flour
2 tbsp. fat
1/3 c. sugar
1/3 c. vinegar
Fry diced onion in hot fat until brown. Add flour to blend, then
add sugar, salt, vinegar and water. Bring to a boil, stirring
constantly. Pour dressing over diced potatoes and diced ham;
sprinkle with pepper and serve hot. Serves 8.
