SPINACH
AND ORANGE SALAD
1 lb. spinach, washed, trimmed, drained, torn into bite-size
pieces
1/2 lb. fresh mushrooms, cleaned,sliced
1 (5 oz.) can water chestnuts, drained, rinsed
4 navel oranges, peeled, sectioned(or 1 lg. can of mandarin
oranges)
Combine, refrigerate, reserve liquid. 2 tbsp. cider vinegar 2
tbsp. orange juice 1 tbsp. soy sauce 1/4 tsp. dry mustard 1/8
tsp. pepper, fresh ground Combine in jar with tight fitting lid.
Shake well. Before serving, pour over reserved mixture; toss
lightly.
Makes 8 servings , Serving size: 1 1/2 cups. makes
