Carrot and Pumpkin Muffins
1 1/2 cups whole wheat flour
1 1/2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
1 cup canned pumpkin
3/4 cup honey
2 tablespoons apple sauce
1 tablespoon oil
1 cup carrots, shredded
Preheat oven to 350*. Coat a 12 cup muffin pan with nonstick spray, or use
paper muffin cups. In a large bowl, mix flour, spice, baking soda and
powder. In a medium bowl, whisk egg, pumpkin, honey, applesauce and oil
until smooth. Add to flour mixture and stir until combined. Fold in carrots.
Spoon into muffin pan. Bake for about 25 minutes, remove from pan and cool
on a rack.
