Texas Style Green Beans

1 lb. green beans
4 slices bacon, cut up
1 medium onion, chopped
1 tomato, chopped
1 clove garlic, finely chopped
1/2 tsp. dried oregano leaves
1/2 tsp. salt
dash of pepper
2 Tbsp. lemon juice

Prepare green beans. Wash green beans and remove end (leave whole). Cut into 1-inch pieces, heat beans in salt water (1/2 teaspoon salt to 1 quart water). Cook uncovered 5 minutes then cover and cook 10 to 15 minutes or until tender. Cook bacon in 10-inch skillet until crisp. Take bacon out of skillet. Cook onion in bacon fat until tender. Add tomato, garlic, oregano, salt and pepper, simmer uncovered 5 minutes. Stir in green beans, heat until hot. Drizzle with lemon juice, and garnish with bacon.
