Simple and
Easy Bean Recipes

Green Beans and Potatoes
2 to 4 Tbsp. butter or margarine
4 c. fresh snap green beans, cleaned and snapped 1 to 1 1/2-inch pieces
1 large onion
6 to 8 small new potatoes, quartered or cut in 1-inch cubes
boiling hot water
Melt 2 tablespoons butter in large skillet. Saute onion over medium heat
until tender. Add green beans and saute until all are bright green all over
but not blistered (if blistering before all have turned bright, lower heat).
Use slotted spoon and remove beans and onion to bowl. Add more butter to
skillet if necessary and saute potatoes 5 minutes. Lower heat to simmer, add
beans and onion and hot water to level off beans. Cover and simmer until
beans and potatoes are tender 15 to 45 minutes, depending on heat. Add water
as necessary.
