Simple and Easy Bean Recipes
Red bean, navy bean, pinto bean, green bean, black bean, lima bean, white bean recipes that have been collected from box tops, cans, newspapers, magazines and friends over the years.


 

Green Beans with Almonds

5 c. fresh green beans, cut diagonally
1/4 c. toasted blanched almonds, coarsely chopped
1/4 lb. mushrooms, sliced
3 Tbsp. melted butter or margarine
1/2 tsp. salt
1/4 tsp. lemon juice
1/4 tsp. rosemary or savory

Cook fresh green beans 15 to 20 minutes until tender. Heat 2 tablespoons butter or
margarine. Add mushrooms and cook slowly, occasionally moving and turning with a spoon, until mushrooms are lightly browned and tender. When beans are tender, drain if necessary. Add almonds and mushrooms to cooked green beans and toss with a mixture of 3 tablespoons melted butter or margarine, 1/2 teaspoon salt, 1/4 teaspoon lemon juice, and 1/4 teaspoon rosemary or savory.
Serve immediately.
Serves 6 to 8.
