Simple and
Easy Bean Recipes

Green Beans with Almonds
5 c. fresh green beans, cut diagonally
1/4 c. toasted blanched almonds, coarsely chopped
1/4 lb. mushrooms, sliced
3 Tbsp. melted butter or margarine
1/2 tsp. salt
1/4 tsp. lemon juice
1/4 tsp. rosemary or savory
Cook fresh green beans 15 to 20 minutes until tender. Heat 2 tablespoons
butter or
margarine. Add mushrooms and cook slowly, occasionally moving and turning
with a spoon, until mushrooms are lightly browned and tender. When beans are
tender, drain if necessary. Add almonds and mushrooms to cooked green beans
and toss with a mixture of 3 tablespoons melted butter or margarine, 1/2
teaspoon salt, 1/4 teaspoon lemon juice, and 1/4 teaspoon rosemary or
savory.
Serve immediately.
Serves 6 to 8.
