Easy Bean Recipes

How to Can Green Beans
1 gal. snapped green beans
1/2 gal. water
1 c. sugar
1/2 c. vinegar
salt
Combine the green beans, water, sugar and vinegar in a large pan. Heat until
boiling; cook until beans change color, 15 to 20 minutes.
Thoroughly wash jars; check for nicks. Jars must be in perfect condition.
Cover jars with boiling water; boil lids
and rings. Everything must be kept very hot. Pack beans with wooden spoon in
jars; add 1 teaspoon salt per quart or 1/2 teaspoon per pint. Cover beans
with hot brine, 1 jar at a time.
Remove air bubbles by inserting knife in jar; wipe rim clean. Seal with hot
lids. No processing needed for this
recipe. The vinegar and salt preserve. To cook, pour off brine and wash
beans thoroughly. I bring beans to a boil, pour off water and then cook as
for fresh green beans.
